Cajun BBQ Sauce


Bahan

475 ml Kaldu Daging (Ayam, Sapi atau Babi)

225 g Bacon

360 gr Bawang Bombay, rajang halus

360 gr Saus Cabai

240 ml Madu

180 ml Kacang Pecan, cincang kasar

75 ml Orange Juice (daging buahnya)

1/2 bh Jeruk Lemon (daging buahnya)

60 ml Butter

60 ml Lemon Juice

4 bh Bawang Putih, haluskan

15 ml Tabasco

15 ml Bawang Bombai Bubuk

15 gr Bawang Putih Bubuk

15 gr Garam

7.5 gr Lada Hitam

7.5 gr Lada Putih

7.5 gr Cayenne Bubuk


Cara membuat

  1. Campur lada hitam, lada putih, bawang bombai, bawang putih bubuk, garam dan cayene bubuk dalam wadah, campur menjadi satu.

  2. Goreng bacon hingga garing, ambil bacon sisihkan dan biarkan minyaknya. Tiriskan bacon dan sisihkan. Biarkan garing selama 5-10 menit.

  3. Setelah dingin, remukkan hingga menjadi menjadi bubuk halus.

  4. Dalam minyak dari sisa bacon, tumis bawang bombai hingga harum dan layu, tambahkan campuran bumbu bubuk yang sudah dicampur sebelumnya, aduk.

  5. Masukkan kaldu, saus cabai, madu, kacang pecan, orange juice, bacon yang sudah dihaluskan, bawang putih, Tabasco, daging jeruk lemon dan orange. Kecilkan api, masak selama 10 menit sambil sesekali diaduk.

  6. Masukkan butter tepat sebelum diangkat dari kompor dan biarkan butter meleleh, aduk.

  7. Biarkan saus dingin kurang lebih 10 - 15 menit. Setelah saus dingin, masukkan ke dalam blender kemudian proses blender hingga halus.

The Correct Way to Use a Chef's Knife

  1. Fry bacon in a large saucepan until crisp.

  2. Remove bacon (reserving rendered fat) and place onto a plate lined with paper towels.

  3. Let cooked bacon drain fro 5 to 10 minutes.

  4. Once cooled enough to handle, crumble the bacon into fine pieces.

The Correct Way to Use a Chef's Knife

  2. Remove bacon (reserving rendered fat) and place onto a plate lined with paper towels.

  3. Let cooked bacon drain fro 5 to 10 minutes.

  4. Once cooled enough to handle, crumble the bacon into fine pieces.

  5. With a spoon, remove any of the impurities from rendered bacon fat.

  6. Place pan back on heat and add onions.

  7. Cook over medium heat until onions are soft.

  8. Add spice mixture and stir.

  9. Add stock, chili sauce, honey, pecans and orange juice, bacon, garlic, Tabasco and lemon and orange rinds and pulp.

  10. Reduce heat to low and let simmer for 10 minutes. Stir occasionally.

  11. Remove orange and lemon rinds and continue cooking for an additional 15 minutes. Stir occasionally.

  12. Right before taking sauce off of heat, add butter and stir in until melted.

  13. Remove from heat and allow sauce to cool for 10 to 15 minutes.

  14. Pour sauce into a food processor or blender and mix until smooth.

  15. The sauce is now complete.
