Bahan
Daging
450 gr Daging
1 ltr Air
1 bh Bawang Bombai, potong menjadi empat bagian
3 gr Lada Hitam Bubuk
2 btr Cengkeh
3 btg Thyme Segar
Saus
113 gr Butter
2 bh Bawang Merah, cincang kasar
240 gr Tepung Serbaguna
480 ml Susu
480 ml Kaldu Sapi, dari air daging cincang
110 ml Air
Garam dan Lada secukupnya
Pala bubuk, secukupnya
Daun Parsley segar, cincang halus
15 ml Dijon Mustard
Untuk Lapisan Luar
110 gr Tepung Serbaguna
2 btr Telur
900 gr Tepung Panir
Minyak goreng untuk menggoreng
Cara membuat
Rebus dengan air dan bumbu, masak dengan api kecil hingga mendidih dan daging empuk. Sambil buang buih dan kotoran saat merebus daging. Setelang dingin, kemudian saring, potong-potong daging.
Masukkan butter, kemudian tumis bawang merah hingga harum kemudian tepung serbaguna. Tambahkan susu, aduk rata kemudian tambahkan air rebusan daging yang sudah disaring sebelumnya.
Masak hingga saus sedikit meletup, kemudian masak dengan api kecil selama 30 menit sambil sesekali terus diaduk. Tambahkan garam, lada dan pala bubuk, aduk rata. Tambahkan Dijon Mustard, potongan daun parsley dan daging sapi yang sudah dimasak sebelumnya.
Simpan dalam lemari pendingin selama 4-6 jam.
Bentuk bulat-bulat, kemudian gulingkan ke dalam tepung serbaguna, kemudian ke kocokan telur dan terakhir ke tepung roti. Segera goreng dalam minyak panas.
Goreng hingga kuning kecoklatan, angkat dan sajikan dengan Dijon Mustard.
